This Yamahai Junmai sake is made with Gohyakumangoku rice which is cultivated extensively in Ishikawa prefecture. It has pronounced aromas of musk melon, green tea, fresh mushroom, chestnut, and nutty parmesan rind. The flavours in the mouth are in synchronicity with earthy, mushroom, nuts and toasted brown rice reinforcing layer upon layer of umami. Cleansing acidity has orange pith, rind and pepper elements leaving this sake with an expansive medium dry finish. A sake with mega-intensity showcasing the Yamahai starter technique which will develop after bottle opening and morph into Noguchi Naohiko Sake Institute’s distinctive style.
