This Junmai Daiginjo was made from Kissui which is a local rice produced in the neighbouring prefecture of Yamagata. Kissui is derived from the heritage rice strain Kame-no-O and the sake shows rich rice notes balanced with aromatic tropical fruit notes and a touch of liquorice.
