This sake shows all the desirable hallmarks of the Daiginjo category – elegant light body, smooth suppleness, delicate flavour palate and lifted aromatics. The Kokuryu Daiginjo has been released after one year of low temperature maturation and is made from Yamadanishiki rice polished to 50% of the original rice grain size.

Poured into glassware with a tulip shape, the Kokuryu Daiginjo will show beautiful aromas of fresh apple, nashi pear and white blossom. This is the essence of ‘Ginjo-ka’, which is the smell of sake made with a careful cold temperature brewing technique designed to achieve this fragrance. The silky palate is filled with fruity pear notes and the light-body and balance of all components is exceptional, particularly the short, clean finish known as “Kire” which is notable in this style. It is a medium-dry Daiginjo showing grace and subtlety with great structure which echoes the rest of its Kokuryu cousins.

The sake comes boxed, in the distinctive Kokuryu designed bottle and the label shows gold imprinted kanji characters centrally on a background motif of a grey woven cloth.
