A Sake made in the cold and snowy region of Hokkaido, with a purity and crispness that can be tasted and experienced with each sip.

This Junmai Ginjo has been brewed in Japan’s upper island of Hokkaido, a province renowned for the purity of its water, something that has been used to great advantage when brewing this saké. In the early 1990’s this brewery began experimenting with fermenting and maturing their sake outside in purpose built ice domes or igloo-like structures called Yukihimuro in Japanese. Keeping the temperature of the fermentation low impacts the flavour and aroma of the sake. The result combines the beautiful, sweet and gentle aromas of the rice with a fresh and dry texture, making it easy to drink from the moment it first passes the lips to the very last sip.
