A sake designed to showcase locally grown Rakufumai rice which the brewery has been using since 2019. The sake has a light, refreshing taste with clean acidity. It has a zesty feel on the palate from the retained fermentation fizz creating a lively, lifted impression. Creamy yoghurt aromas with a hint of basil fill the glass on pouring and this lightly cloudy sake is medium sweet with a fruity flavour base punctuated by lime citrus. The colour of the label does provide us with a visual clue to the flavour profile in the bottle capturing some of the essence of green.
